Make these Spinach Feta Chicken Meatballs in bulk, freeze and enjoy...if they last that long!
These meatballs were topped on a bowl of zucchini noodles and a spicy Classico pasta sauce.
Ingredients (Makes 12):
- Olive Oil
- 1 cup baby spinach
- 1lb lean ground chicken
- 3 minced garlic cloves
- 1 lightly beaten egg
- 3/4 cup whole-grain bread crumbs (I used the end slices of my Ezekiel bread and threw them in the food processor for a few seconds)
- 1/4 cup crumbled feta cheese
- 1 tbsp finely chopped fresh basil leaves
- sea salt and fresh ground black pepper to taste.
Instructions:
1. Preheat oven to 450°F. Cover baking dish with olive oil.
2. In a steamer basket over simmering water, steam baby spinach until wilted, 1 to 2 minutes. Let cool and squeeze out water, then chop. (frozen baby spinach works too but fresh taste best!)
3. In a large bowl, combine lean ground chicken, minced garlic cloves, lightly beaten egg, whole-grain bread crumbs, crumbled feta cheese, finely chopped fresh basil leaves, seal salt, fresh ground black pepper, to taste, and spinach. Mix well to combine. Use your hands to form mixture into 12 balls.
4. Transfer to prepared baking dish and bake for 15-20 minutes, until golden brown and no longer pink instead.
